This year, VegFest exploded into the largest ever! It was held at the 1st Bank Center in Broomfield CO and attracted thousands of people!

I gave a lecture on the updates in 2018 of all of the plant-based research and support — Amazing data which is life-transforming. Plant-based diets are here to stay and are our best way to stay healthy.

I was so excited and honored to open up the speaking sessions at VegFest Colorado 2017! I got so many questions and positive feedback! Thank you to the organizers for having me!

This year was spectacular! There were more vendors and food trucks than ever before and we even got to speak in the animal barn (how ironic)!

The Most Decadent Raw Vegan Chocolate Pie

This weekend, I got to be at the screening of an excellent new documentary called Eating You Alive ( and standing next to me was Dr. Christine Miller who is not only an extraordinary plant-based doc, but also an amazing chef! She has shared one of her best recipes with us below! Enjoy!


Raw Chocolate Cream Pie

Having a sweet treat for the holidays or a birthday celebration is something I cherish, but I don’t want it to be at the expense of good health.  So I’ve recreated one of my favorite childhood pies – chocolate silk cream – into one that actually promotes a healthy lifestyle. This pie is made with real, whole foods (all raw!) and is completely plant-based (vegan). It is also gluten and sugar-free, so it really is a true “treat. And most importantly, it is rich, creamy, chocolaty, and wonderfully decadent. I hope you enjoy this chocolate pie as much as I do, and here’s to your great health!

VegFest Colorado 2016!

Wow! VegFest Colorado ( was nothing short of fantastic this year! Besides all the wonderful vendors, foods, clothing and knowledge to be gained, there was an unbelievable desire for people to really learn and grow from all the information available.

Cholesterol Guidelines

As many of you may know, the US Dietary Guidelines for Adults is under revision. One of the major points of controversy is the potential lifting of cholesterol limits. Now, we’ve known for a while that the arbitrary 300 mg of cholesterol per day ceiling that was set was probably a “best” guess. But, we also know that there is a direct influence of dietary cholesterol (i.e. from animal products) on our serum (blood measured) cholesterol. As such, eating all the eggs and butter you would want will indeed raise your serum cholesterol, in addition to creating some serious inflammation, and in susceptible people, make blood sugar (or diabetes) worse and raise one’s risk for several cancers, heart attack, and stroke. As such, it is my hope that we don’t lift this guideline just yet until we have a better handle on the magnitude of this problem. As you could imagine, many big food industries would jump on the ability to create rich decadent foods loaded with cholesterol if this limit is lifted. Know that many of your cardiologist professional organizations are working hard to prevent the potential public health crises that could ensue!

Mmmm. Chile con Queso

I didn’t Screen Shot 2015-08-08 at 8.20.53 PMthink it would be possible. A local company here in Colorado has come up with spicy “queso” without the dairy! It’s sensational. I am not being paid to say this either… Let Thy Food has come out with a new product that is so close to the real thing that I cannot imagine my chips or burritos without it! Stop by Nooch or Whole Foods here in Denver to grab some!

Wow. I didn’t know vegan “buffalo wings” could be so good!


Screen Shot 2015-08-04 at 8.52.22 PMThis weekend, my wife treated us to a most delicious treat: vegan cauliflower buffalo “wings.” Now while this may sound crazy to you, the good part of the buffalo “wing” is not really the chicken — it’s the spices and seasoning. And with some amazing tricks in the kitchen along with your favorite sauce, you can transform ordinary cauliflower into a game time hero that everyone (even the hard core carnivores) will love!

For me personally, I always prefer the plain one, but if you need that extra richness, try the dressing.

How does eating plants help my heart?

This is the question I get regularly. Why do this? Why do plants help?

Hippocrates, the founder of modern medicine said “Let food by thy medicine,” and he wasn’t wrong. Life wasn’t meant to be lived on lifelong medicines. It was meant to feel great, be active, and eat right without dependence on long term medication pills. And, as such, with eating plants, there are enormous health benefits from preventing cancer all the way to preventing and treating heart disease.

Following a whole foods, whole grain, plant-based, low fat, low salt, whole-foods diet not only lowers cholesterol and blood pressure (which are known contributors to heart disease) but also lowers weight, reduces are cures diabetes (a major contributor to heart disease) and improves energy levels allowing more exercise (a major preventer of heart disease).

There are very few studies showing much in the reversal of heart disease. While statin drugs have been shown in very high doses to effect minimal coronary disease reversal, work by Dr. Esselstyn (SEE FIGURE) have shown marked angiographic (a test to show the coronary arteries) disease reversal, and abatement in angina (chest pain from heart disease). Literally following a lifestyle of plant-based diets, exercising regularly, and practicing mindfulness can do more for your health than most procedures or medicines. However, it requires commitment… a very firm commitment.
